How to use all emoji for Tapbacks
1. Open Messages.
2. Join the appropriate conversation.
3. Long-press the message.

In the Tapbacks box above the message, scroll to the right.
to display a selection of emoji to use. If you don’t see the appropriate emoji or wish to use a sticker, hit the gray smiley to the far right of the menu to access your emoji keyboard. To locate the emoji you wish to use, either scroll through them or use the search option.
To access your prefabricated and personalized stickers, hit the sticker symbol (the folded-over circle) on the left side of the emoji keyboard. That means you may respond to someone’s message with a sticker of your pet if you wish, and who doesn’t want to see more animals?
